Ingredients
  • 300 gram Carrots
  • 300 gram Sweet potatoes
  • 200 gram Brussels sprouts
  • 150 gram Red onion
  • 4 teaspoon Maple syrup
  • 1 cup Orange juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the carrots and sweet potatoes. Cut them into bite-sized pieces.
  3. Trim the Brussels sprouts and cut them in half.
  4. Peel and slice the red onion.
  5. In a small bowl, whisk together the maple syrup, orange juice, olive oil, salt, and black pepper.
  6. Place the vegetables on a large baking sheet and pour the maple orange glaze over them. Toss to coat evenly.
  7. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and golden brown, stirring once halfway through.
  8. Remove from the oven and let rest for 5 minutes before serving.
