  • 2 pound Sweet Potatoes
  • 1/4 cup Maple Syrup
  • 2 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/2 cup Pecans
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the sweet potatoes into 1-inch cubes.
  3. In a bowl, mix together maple syrup, olive oil, salt, cinnamon, and nutmeg.
  4. Add the sweet potatoes to the bowl and toss until well coated.
  5. Transfer the sweet potatoes to a baking dish and spread them out in a single layer.
  6. Bake for 25-30 minutes, or until the sweet potatoes are tender and glazed.
  7. While the sweet potatoes are baking, toast the pecans in a dry skillet over medium heat until fragrant.
