  • 500 gram Potatoes
  • 200 gram Carrots
  • 200 gram Leeks
  • 150 gram Onion
  • 150 gram Cabbage
  • 100 gram Pearl barley
  • 1 liter Vegetable broth
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 10 gram Parsley
Instructions
  1. Peel and chop the potatoes, carrots, leeks, onion, and cabbage.
  2. Rinse the pearl barley.
  3. In a large pot, bring the vegetable broth to a boil.
  4. Add the potatoes, carrots, leeks, onion, cabbage, and pearl barley to the pot.
  5. Season with salt and pepper.
  6. Cover the pot and simmer for about 1 hour or until the vegetables and barley are tender.
  7. Serve hot, garnished with chopped parsley.
