  • 2 cup Navy Beans
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 3 clove Garlic
  • 4 cup Vegetable Broth
  • 2 tablespoon Tomato Paste
  • 2 piece Bay Leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Parsley
  • 2 tablespoon Olive Oil
  • 2 cup Water
Instructions
  1. Soak the navy beans overnight in water.
  2. Drain and rinse the soaked beans.
  3. In a large pot, heat olive oil over medium heat.
  4. Add chopped onion, carrot, celery, and minced garlic. Sauté until vegetables are tender.
  5. Add tomato paste, bay leaves, thyme, salt, and black pepper. Stir well.
  6. Add soaked beans, vegetable broth, and water. Bring to a boil.
  7. Reduce heat to low, cover the pot, and simmer for about 1 hour or until beans are tender.
  8. Remove bay leaves and adjust seasoning if needed.
  9. Serve hot, garnished with chopped parsley.
