Ingredients
  • 2 teaspoon Vegetable oil
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 inch Ginger
  • 2 medium Tomatoes
  • 2 medium Potatoes
  • 2 medium Carrots
  • 1 cup Cauliflower florets
  • 1 cup Green peas
  • 2 tablespoon Cashew nuts
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 cup Water
  • 2 tablespoon Fresh coriander leaves
Instructions
  1. Heat vegetable oil in a pan and sauté chopped onion, garlic cloves, and grated ginger until golden.
  2. Add chopped tomatoes and cook until they turn mushy.
  3. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
  4. Add diced potatoes, carrots, cauliflower florets, and green peas. Cook for 5 minutes.
  5. Add water and bring to a boil. Reduce heat, cover, and simmer for 20 minutes or until vegetables are cooked.
  6. In a blender, blend cashew nuts with water to make a smooth paste. Add this paste to the curry and mix well.
  7. Cook for another 5 minutes.
  8. Garnish with fresh coriander leaves.
  9. Serve hot with rice or naan bread.
