Ingredients
  • 500 gram Cauliflower
  • 2 teaspoon Olive Oil
  • 2 teaspoon Curry Powder
  • 2 tablespoon Lemon Juice
  • 1 cup Greek Yogurt
  • 2 tablespoon Cilantro
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, curry powder, salt, and black pepper.
  3. Spread the cauliflower on a baking sheet and roast for 20 minutes, or until golden brown and tender.
  4. In a separate bowl, mix together lemon juice, Greek yogurt, and cilantro.
  5. Once the cauliflower is done, let it cool for 10 minutes.
  6. Add the roasted cauliflower to the yogurt mixture and toss until well coated.
