Ingredients
  • 2 cup Black-eyed peas
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 2 medium Carrots
  • 2 medium Potatoes
  • 2 tablespoon Tomato paste
  • 2 tablespoon Olive oil
  • 4 cup Water
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 2 leaf Bay leaves
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
Instructions
  1. Soak the black-eyed peas overnight in water. Drain and rinse.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until golden brown.
  3. Add tomato paste, cumin, paprika, salt, and black pepper. Stir well.
  4. Add soaked black-eyed peas, carrots, potatoes, bay leaves, and water. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 1 hour or until the peas are tender.
  6. Remove bay leaves and stir in lemon juice.
  7. Serve hot, garnished with fresh parsley.
