Ingredients
  • 200 gram Carrots
  • 300 gram Potatoes
  • 150 gram Broccoli
  • 1 cup Corn
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 2 tablespoon Lime juice
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add carrots, potatoes, broccoli, and corn. Stir well.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. Stir in tomato paste, salt, pepper, paprika, and cumin. Cook for an additional 5 minutes.
  5. Remove from heat and let it rest for 5 minutes.
  6. Stir in lime juice and fresh cilantro.
  7. Serve hot and enjoy!
