Ingredients
  • 2 cup Lima Beans
  • 4 cups Vegetable Broth
  • 1 medium Onion
  • 1 medium Carrot
  • 1 stalk Celery Stalk
  • 2 clove Garlic Clove
  • 2 tablespoon Olive Oil
  • 1 teaspoon Dried Thyme
  • 1 leaf Bay Leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Fresh Parsley
Instructions
  1. Rinse and drain the lima beans.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.
  4. Add lima beans, vegetable broth, bay leaf, thyme, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Remove bay leaf and blend half of the soup until smooth.
  7. Return blended soup to the pot and stir.
  8. Cook for another 5 minutes.
  9. Serve hot, garnished with fresh parsley.
