Ingredients
  • 1 piece Baguette
  • 1 cup Lima beans
  • 2 clove Garlic
  • 3 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette into diagonal pieces.
  3. Place the baguette slices on a baking sheet and toast in the oven until lightly golden, about 5 minutes.
  4. In a pot of boiling water, cook the lima beans until tender, about 10 minutes. Drain and set aside.
  5. In a pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  6. Add cooked lima beans, lemon juice, salt, and black pepper to the pan. Cook for 5 minutes, stirring occasionally.
  7. Remove from heat and let it cool slightly.
  8. In a food processor, blend the lima bean mixture until smooth.
  9. Spread the lima bean mixture onto the toasted baguette slices.
  10. Garnish with fresh parsley.
  11. Serve and enjoy!
