Ingredients
  • 1 cup Lentils
  • 2 cup Water
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Cumin powder
  • 1 teaspoon Cinnamon powder
  • 1 cup Dried apricots
  • 1 cup Dried cranberries
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, bring water to a boil and add the lentils. Cook for 15-20 minutes until tender.
  3. In a separate pan, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until golden brown.
  4. Add cumin powder and cinnamon powder to the pan. Stir well.
  5. Add cooked lentils, dried apricots, and dried cranberries to the pan. Mix everything together.
  6. Cook for an additional 5 minutes, stirring occasionally.
  7. Remove from heat and add lemon juice, fresh parsley, salt, and black pepper. Mix well.
  8. Let the lentils with fruit rest for 5 minutes before serving.
  9. Serve hot and enjoy!
