Ingredients
  • 2 cup Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery stalks
  • 2 clove Garlic cloves
  • 2 tablespoon Tomato paste
  • 4 cup Vegetable broth
  • 1 leaf Bay leaf
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrot, celery, and garlic. Cook until vegetables are softened.
  4. Stir in tomato paste and cook for 1 minute.
  5. Add lentils, vegetable broth, bay leaf, thyme, salt, and black pepper.
  6. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  7. Remove from heat and let it rest for 5 minutes.
  8. Serve hot, garnished with fresh parsley.
