Ingredients
  • 1 cup Lentils
  • 1 bunch Watercress
  • 1 medium Onion
  • 1 medium Carrot
  • 1 stalk Celery
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Lemon juice
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.
  3. Add lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are cooked.
  4. Remove from heat and let the soup rest for 5 minutes.
  5. Using an immersion blender, blend the soup until smooth.
  6. Stir in watercress, salt, black pepper, and lemon juice.
  7. Serve hot and enjoy!
