Ingredients
  • 1 cup Lentils
  • 1 bunch Swiss Chard
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 2 tablespoon Tomato Paste
  • 2 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Lemon Juice
Instructions
  1. Rinse the lentils and set aside.
  2. Chop the onion, carrot, celery, and garlic.
  3. Heat olive oil in a large pot over medium heat.
  4. Add the chopped onion, carrot, celery, and garlic to the pot and sauté until softened.
  5. Add cumin, paprika, salt, and black pepper to the pot and cook for another minute.
  6. Add lentils, vegetable stock, and tomato paste to the pot. Bring to a boil.
  7. Reduce heat to low and simmer for 30-40 minutes, or until the lentils are tender.
  8. While the soup is simmering, remove the stems from the Swiss chard and chop the leaves.
  9. Add the chopped Swiss chard leaves to the pot and cook for an additional 5 minutes.
  10. Stir in lemon juice.
  11. Serve hot and enjoy!
