Ingredients
  • 1 cup Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 3 clove Garlic
  • 4 cup Vegetable broth
  • 2 teaspoon Herbes de Provence
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are softened, about 5 minutes.
  3. Add lentils, vegetable broth, herbes de Provence, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  4. Remove from heat and let the soup rest for 5 minutes.
  5. Serve hot, garnished with fresh parsley.
