  1. In a large pot, add lentils, onion, carrot, celery stalks, garlic cloves, vegetable broth, cumin powder, coriander powder, turmeric powder, salt, and black pepper. Bring to a boil and then reduce heat to simmer for 30 minutes.
  2. While the soup is cooking, prepare the date balls. In a food processor, blend dates, almonds, pumpkin seeds, fresh parsley, lemon juice, olive oil, salt, and black pepper until a sticky mixture forms. Roll into small balls and set aside.
  3. For the celery salad, thinly slice celery stalks, apple, and walnuts. In a bowl, mix together celery, apple, walnuts, dried cranberries, lemon juice, honey, Dijon mustard, salt, and black pepper.
  4. After the soup has simmered for 30 minutes, remove from heat and let it rest for 10 minutes.
  5. Serve the lentil soup with date balls and celery salad on the side.
