Ingredients
  • 1 cup Red lentils
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 medium Carrots
  • 2 medium Potatoes
  • 4 cup Vegetable broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the carrots and potatoes, and cook for a few minutes.
  4. Add the lentils, cumin, coriander, salt, and black pepper. Stir well.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for about 25 minutes or until the lentils and vegetables are tender.
  7. Stir in the lemon juice.
  8. Serve hot, garnished with fresh cilantro.
