Ingredients
  • 1 cup Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
Instructions
  1. Rinse the lentils and set aside.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.
  3. Add lentils, vegetable broth, tomato paste, cumin, paprika, salt, and black pepper. Stir well.
  4. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are cooked.
  5. Remove from heat and let it rest for 5 minutes.
  6. Stir in fresh parsley and lemon juice.
  7. Serve hot and enjoy!
