Ingredients
  • 1 cup Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 3 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the lentils and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add diced onion, carrots, celery, and minced garlic. Cook until vegetables are tender.
  4. Add tomato paste, cumin, coriander, paprika, salt, and black pepper. Stir well.
  5. Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes or until lentils are tender.
  6. Stir in lemon juice.
  7. Serve hot, garnished with fresh parsley.
