Ingredients
  • 1 cup Lentils
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 1 medium Carrot
  • 1 stalk Celery stalk
  • 2 clove Garlic cloves
  • 1 medium Tomato
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
  • 1 tablespoon Lemon juice
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, carrot, celery, and minced garlic. Sauté until vegetables are tender.
  4. Add cumin, paprika, salt, and black pepper. Stir for 1 minute.
  5. Add lentils, vegetable broth, and diced tomato. Bring to a boil.
  6. Reduce heat and simmer for 25-30 minutes, until lentils are soft.
  7. Remove from heat and let it rest for 5 minutes.
  8. Stir in lemon juice and fresh parsley.
  9. Serve hot and enjoy!
