Ingredients
  • 1 cup Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery stalks
  • 3 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 2 leaf Bay leaves
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
  • 4 wedge Lemon wedges
Instructions
  1. Rinse lentils and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrot, celery, and garlic. Sauté until vegetables are softened.
  4. Add tomato paste, cumin, paprika, salt, and black pepper. Stir well.
  5. Add lentils, bay leaves, and vegetable broth. Bring to a boil.
  6. Reduce heat, cover, and simmer for 25-30 minutes or until lentils are tender.
  7. Remove bay leaves.
  8. Serve hot, garnished with fresh parsley and lemon wedges.
