Ingredients
  • 1 cup Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 medium Celery stalks
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Dried thyme
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 1 tablespoon Lemon juice
Instructions
  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat some oil and sauté the onion, carrot, celery, and garlic until softened.
  3. Add the lentils, vegetable broth, tomato paste, cumin, coriander, thyme, bay leaf, salt, and black pepper to the pot. Stir well.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes or until the lentils are tender.
  5. Remove the bay leaf and stir in the fresh parsley and lemon juice.
  6. Let the soup rest for 5 minutes before serving.
  7. Serve hot and enjoy!
