Ingredients
  • 1 cup Lentils
  • 1 medium Red bell pepper
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 1 cup Fresh parsley
  • 1 cup Fresh mint
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook lentils according to package instructions. Drain and set aside.
  2. Chop the red bell pepper, cucumber, cherry tomatoes, red onion, parsley, and mint.
  3. In a large bowl, combine the cooked lentils, chopped vegetables, parsley, and mint.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the lentil mixture and toss to combine.
  6. Let the salad rest for 10 minutes to allow the flavors to meld.
  7. Serve the lentil salad chilled or at room temperature.
