Ingredients
  • 1 cup Lentils
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook lentils according to package instructions. Drain and let cool.
  2. Chop cucumber, cherry tomatoes, red onion, and fresh parsley.
  3. In a large bowl, combine cooked lentils, chopped vegetables, lemon juice, olive oil, salt, and black pepper.
  4. Toss gently to combine all ingredients.
