Ingredients
  • 1 cup Lentils
  • 1 cup Pasta
  • 2 medium Carrots
  • 2 stalk Celery
  • 1 small Onion
  • 2 clove Garlic
  • 2 medium Tomatoes
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried herbs (such as thyme, oregano)
  • 1 Bay leaf
  • 2 cup Water
Instructions
  1. In a large pot, heat olive oil over medium heat. Add chopped onions, minced garlic, carrots, and celery. Cook until vegetables are tender.
  2. Add lentils, pasta, tomatoes, vegetable broth, water, salt, black pepper, dried herbs, and bay leaf to the pot. Stir well.
  3. Bring the soup to a boil, then reduce the heat and simmer for about 20-25 minutes or until the lentils and pasta are cooked.
  4. Remove the bay leaf and adjust the seasoning if needed.
  5. Let the soup rest for about 10 minutes before serving.
  6. Serve hot and enjoy!
