Ingredients
  • 2 cup Lentils
  • 1 medium Onion
  • 2 clove Garlic
  • 2 medium Carrot
  • 2 stalk Celery
  • 2 medium Tomato
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, garlic, carrot, and celery. Cook until vegetables are softened.
  4. Add cumin, paprika, salt, and black pepper. Stir well.
  5. Add lentils, tomatoes, and vegetable broth. Bring to a boil.
  6. Reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.
  7. Remove from heat and let it rest for 5 minutes.
  8. Serve hot, garnished with fresh parsley.
