Ingredients
  • 2 cup Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery stalks
  • 3 clove Garlic cloves
  • 2 tablespoon Tomato paste
  • 2 cup Vegetable broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Rinse the lentils under cold water and drain them.
  3. In a large oven-safe skillet or casserole dish, heat olive oil over medium heat.
  4. Add the onion, carrot, celery, and garlic. Sauté until the vegetables are softened.
  5. Stir in the tomato paste, thyme, oregano, salt, and black pepper.
  6. Add the lentils and vegetable broth. Bring to a boil.
  7. Cover the skillet or dish with a lid or foil and transfer it to the preheated oven.
  8. Bake for 30-35 minutes or until the lentils are tender.
  9. Remove from the oven and let it rest for 10 minutes.
  10. Garnish with fresh parsley before serving.
