Ingredients
  • 1 cup Lentils
  • 1 cup Barley
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 1 piece Bay leaf
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 cup Water
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, celery, and garlic. Cook until vegetables are softened, about 5 minutes.
  2. Add lentils, barley, vegetable broth, tomato paste, bay leaf, thyme, salt, black pepper, and water to the pot. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for 30 minutes or until lentils and barley are tender.
  4. Remove bay leaf and serve hot.
