Ingredients
  • 2 can Chickpeas
  • 1 medium Red bell pepper
  • 1 medium Red onion
  • 2 clove Garlic cloves
  • 1 medium Lemon
  • 2 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Drain and rinse the chickpeas.
  3. Chop the red bell pepper, red onion, and garlic cloves.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add the chopped vegetables and sauté for 5 minutes.
  6. Add the chickpeas, ground cumin, smoked paprika, salt, and black pepper to the skillet. Stir well to combine.
  7. Squeeze the juice of the lemon over the mixture and stir again.
  8. Transfer the mixture to a casserole dish and spread it evenly.
  9. Bake in the preheated oven for 25 minutes.
  10. Remove from the oven and let it rest for 5 minutes.
  11. Garnish with fresh parsley before serving.
