Ingredients
  • 1 cup Wheat berries
  • 1 can Canned chickpeas
  • 1 cup Fresh parsley
  • 1 cup Fresh mint
  • 1 small Red onion
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook the wheat berries according to package instructions.
  2. Rinse and drain the canned chickpeas.
  3. Chop the parsley, mint, and red onion.
  4. In a large bowl, combine the cooked wheat berries, chickpeas, parsley, mint, and red onion.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Let the salad rest for 10 minutes to allow the flavors to meld.
