String hoppers, also known as idiyappam, are a popular breakfast dish in South India and Sri Lanka. They are made by steaming rice flour dough, which is then pressed through a press to form thin rice noodles. The addition of lemon juice gives these string hoppers a refreshing tangy flavor.

This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Ingredients
  • 2 cup Rice Flour
  • 2 tablespoon Lemon Juice
  • 1 cup Grated Coconut
  • 2 chopped Green Chilies
  • 1 inch grated Ginger
  • 1 sprig Curry Leaves
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Urad Dal
  • 1 teaspoon Salt
  • 2 cup Water
Instructions
  1. In a mixing bowl, combine rice flour, lemon juice, grated coconut, green chilies, ginger, curry leaves, mustard seeds, urad dal, salt, and water.
  2. Mix well to form a smooth batter.
  3. Grease idli plates or steamer trays with oil.
  4. Take a small portion of the batter and place it in a string hopper press or idiyappam maker.
  5. Press the batter onto the greased idli plates or steamer trays in a circular motion to form string hoppers.
  6. Steam the string hoppers for about 10-12 minutes or until cooked through.
  7. Remove from the steamer and let it rest for 10 minutes.
  8. Serve hot with coconut chutney or any curry of your choice.
