Ingredients
  • 1 cup Barley
  • 1.5 cup Edamame
  • 1 cup Red bell pepper
  • 1 cup Carrot
  • 1 cup Cucumber
  • 2 stalk Green onion
  • 3 tablespoon Fresh cilantro
  • 2 tablespoon Lemon juice
  • 2 tablespoon Soy sauce
  • 1 tablespoon Sesame oil
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook barley according to package instructions.
  2. In a large bowl, combine cooked barley, edamame, red bell pepper, carrot, cucumber, green onion, and fresh cilantro.
  3. In a small bowl, whisk together lemon juice, soy sauce, sesame oil, garlic, ginger, salt, and black pepper.
  4. Pour the dressing over the barley mixture and toss to combine.
  5. Let the flavors marinate for 5 minutes.
