Ingredients
  • 1 cup Quinoa
  • 2 cup Water
  • 1 teaspoon Lemon zest
  • 2 tablespoon Lemon juice
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the quinoa under cold water.
  2. In a saucepan, add the rinsed quinoa, water, lemon zest, and salt. Bring to a boil.
  3. Reduce the heat, cover, and simmer for 15-20 minutes until the quinoa is tender and the water is absorbed.
  4. Remove from heat and let it rest for 5 minutes.
  5. Fluff the quinoa with a fork and stir in the lemon juice, olive oil, black pepper, and fresh parsley.
  6. Serve warm and enjoy!
