Boil the potatoes until tender. Drain and let them cool slightly. Cut the potatoes into bite-sized pieces. In a bowl, combine lemon juice, olive oil, salt, and black pepper. Toss the potatoes in the lemon mixture until well coated. Preheat the oven to 200°C (400°F). Spread the potatoes on a baking sheet and roast for 20-25 minutes, or until golden brown. Remove from the oven and sprinkle with fresh parsley. Let them rest for 5 minutes before serving. Enjoy!
