Ingredients
  • 1 cup Ripe avocados
  • 2 tablespoon Lemon juice
  • 1 teaspoon Lemon zest
  • 1 teaspoon Lavender extract
  • 1 cup Almond flour
  • 1/2 cup Coconut flour
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Maple syrup
  • 1/4 cup Coconut oil
  • 1/2 teaspoon Vanilla extract
  • 1/4 cup Almond milk
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mash the avocados and mix in the lemon juice, lemon zest, and lavender extract.
  3. In a separate bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, and salt.
  4. Add the dry ingredients to the avocado mixture and stir until well combined.
  5. In a small saucepan, heat the maple syrup, coconut oil, and vanilla extract until the coconut oil is melted.
  6. Pour the wet ingredients into the avocado mixture and stir until smooth.
  7. Gradually add the almond milk, stirring until the batter is smooth and well combined.
  8. Pour the batter into the greased loaf pan and smooth the top.
  9. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let the loaf cool in the pan for 10 minutes.
  11. Transfer the loaf to a wire rack and let it cool completely before slicing and serving.
