Cut the zucchini into thin strips or use a spiralizer to make zucchini noodles.

Heat olive oil in a large pan over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.

Add zucchini noodles to the pan and sauté for 3-4 minutes, until tender but still slightly crisp.

Remove the pan from heat and squeeze fresh lemon juice over the zucchini noodles. Season with salt and black pepper to taste.
