  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Coconut oil, melted
  • 0.5 cup Maple syrup
  • 2 tablespoon Lemon juice
  • 0.5 cup Almond milk
  • 1 teaspoon Vanilla extract
  • 1 cup Blueberries
  • 2 teaspoon Lemon zest
  • 1 cup Powdered sugar
  • 1 tablespoon Lemon juice
Instructions
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together the melted coconut oil, maple syrup, lemon juice, almond milk, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and stir until just combined. Fold in the blueberries and lemon zest.
  5. Divide the batter evenly among the cupcake liners.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  8. In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Drizzle the lemon frosting over the cooled cupcakes.
