Add the leftover vegetables and chicken to the skillet and sauté for 5 minutes.

Add the leftover rice to the skillet and mix well.

Pour the beaten eggs over the rice and vegetables, and gently mix.

Transfer the mixture to a baking dish and drizzle with 1 tablespoon of olive oil.

Bake in the preheated oven for 15-20 minutes, or until the top is golden brown.
