Ingredients
  • 2 cup Chickpeas
  • 2 tablespoon Olive Oil
  • 1 medium Onion
  • 2 clove Garlic
  • 2 medium Tomatoes
  • 2 medium Carrots
  • 4 cup Vegetable Stock
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Fresh Parsley
  • 1 tablespoon Lemon Juice
Instructions
  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the tomatoes, carrots, cumin, paprika, salt, and black pepper. Cook for 5 minutes.
  3. Add the chickpeas and vegetable stock. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  4. Remove from heat and let the soup rest for 10 minutes.
  5. Using an immersion blender or a regular blender, puree the soup until smooth.
  6. Return the soup to the pot and heat gently. Stir in the lemon juice.
  7. Serve hot, garnished with fresh parsley.
