Ingredients
  • 4 medium Squash
  • 1 cup Rice
  • 4 medium Tomatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 1 bunch Parsley
  • 1 bunch Mint
  • 3 tablespoon Olive Oil
  • 2 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cinnamon
  • 2 cup Water
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Cut the tops off the squash and scoop out the seeds and flesh. Set aside.
  3. In a bowl, mix together the rice, tomatoes, onion, garlic, parsley, mint, olive oil, lemon juice, salt, black pepper, and cinnamon.
  4. Stuff the squash with the rice mixture and place them in a baking dish.
  5. Pour water into the baking dish.
  6. Cover the dish with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the squash is tender.
  8. Let the stuffed squash rest for 10 minutes before serving.
  9. Serve hot and enjoy!
