Ingredients
  • 1 cup Red Lentils
  • 1 large Red Bell Pepper
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Paprika
  • 1/4 teaspoon Cayenne Pepper
  • 2 cup Vegetable Stock
  • 1 tablespoon Lemon Juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the onion and garlic and sauté until softened.
  4. Add the red bell pepper, ground cumin, ground coriander, paprika, and cayenne pepper. Cook for another 2 minutes.
  5. Add the lentils and vegetable stock. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the lentils are tender.
  6. Stir in the lemon juice, salt, and black pepper.
  7. Remove from heat and let it rest for 5 minutes.
  8. Garnish with fresh cilantro before serving.
