Ingredients
  • 2 cup Corn Kernels
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Bell Pepper
  • 1 medium Potato
  • 4 cup Vegetable Stock
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Lime Juice
  • 2 tablespoon Cilantro
  • 1 medium Avocado
Instructions
  1. In a large pot, heat some oil and sauté the onion, garlic, and bell pepper until softened.
  2. Add the corn kernels and diced potato, and cook for a few minutes.
  3. Add the vegetable stock, cumin, smoked paprika, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
  5. Stir in the lime juice and cilantro.
  6. Serve the soup hot, garnished with avocado slices.
