In a large pot, heat some oil and sauté the onion, garlic, and bell pepper until softened.

Add the corn kernels and diced potato, and cook for a few minutes.

Add the vegetable stock, cumin, smoked paprika, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.

Stir in the lime juice and cilantro.
