Ingredients
  • 500 gram Pumpkin
  • 1 piece Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 tablespoon Pumpkin seeds
Instructions
  1. Peel and chop the pumpkin, onion, and garlic.
  2. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until fragrant.
  3. Add the chopped pumpkin and cook for 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes or until the pumpkin is tender.
  5. Remove from heat and let it cool slightly. Use an immersion blender or a regular blender to puree the soup until smooth.
  6. Return the soup to the pot and stir in the coconut milk. Season with salt and black pepper.
  7. Simmer for another 5 minutes.
  8. Serve hot, garnished with pumpkin seeds.
