Ingredients
  • 1 cup Couscous
  • 1 bunch Spinach
  • 1 bunch Kale
  • 4 stalks Green onions
  • 2 cloves Garlic
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Cherry tomatoes
  • 1 cup Feta cheese
Instructions
  1. Cook the couscous according to package instructions.
  2. In a large pot, bring water to a boil and blanch the spinach and kale for 1 minute. Drain and rinse with cold water.
  3. In a pan, heat olive oil and sauté the green onions and garlic until fragrant.
  4. Add the blanched greens to the pan and cook for 2-3 minutes.
  5. In a large bowl, combine the cooked couscous, sautéed greens, lemon juice, salt, and black pepper. Mix well.
  6. Gently fold in the cherry tomatoes and crumbled feta cheese.
  7. Let the dish rest for 5 minutes before serving.
  8. Serve hot or cold.
