Ingredients
  • 2 cup Green peas
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. In a large pot, heat some oil and sauté the onion and garlic until translucent.
  2. Add the green peas and vegetable broth. Bring to a boil and simmer for 15 minutes.
  3. Using an immersion blender, blend the soup until smooth.
  4. Stir in the coconut milk, lemon juice, salt, and black pepper. Simmer for another 5 minutes.
  5. Serve hot, garnished with fresh cilantro.
