Ingredients
  • 4 cup Tomatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh basil
  • 1 cup Croutons
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and cook until onions are translucent.
  2. Add tomatoes, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
  4. Return the soup to the pot and stir in fresh basil. Cook for another 5 minutes.
  5. Serve hot, garnished with croutons.
