Ingredients
  • 4 medium Cucumbers
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 4 tablespoon Kalamata olives
  • 2 ounce Feta cheese
  • 2 tablespoon Fresh dill
  • 2 tablespoon Extra virgin olive oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cut the cucumbers in half lengthwise and scoop out the seeds.
  2. In a bowl, combine cherry tomatoes (halved), red onion (finely chopped), Kalamata olives (pitted and chopped), feta cheese (crumbled), and fresh dill (chopped).
  3. In a separate small bowl, whisk together extra virgin olive oil, lemon juice, salt, and black pepper.
  4. Pour the dressing over the cucumber boats and toss gently to combine.
  5. Serve immediately and enjoy!
