Ingredients
  • 500 gram Chicken
  • 4 teaspoon Palm Oil
  • 1 medium Onion
  • 3 clove Garlic
  • 1 teaspoon Ginger
  • 1 piece Chili Pepper
  • 2 medium Potato
  • 2 medium Carrot
  • 2 medium Plantain
  • 1 cup Okra
  • 1 cup Spinach
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Thyme
  • 1 piece Bay Leaf
  • 2 cup Water
Instructions
  1. Heat palm oil in a large pot over medium heat. Add chopped onions, minced garlic, grated ginger, and chopped chili pepper. Sauté until onions are translucent.
  2. Add chicken pieces to the pot and cook until browned on all sides.
  3. Add diced potatoes, carrots, and plantains to the pot. Stir well to coat the vegetables with the oil and spices.
  4. Pour in water, season with salt, black pepper, thyme, and add a bay leaf. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Add okra and spinach to the pot. Continue simmering for another 15 minutes or until the vegetables are tender.
  6. Remove from heat and let it rest for 10 minutes before serving.
  7. Serve hot with steamed rice or fufu.
