Ingredients
  • 1 cup Kamut
  • 1 cup Lentils
  • 1 cup Chickpeas
  • 1 medium Onion
  • 2 medium Carrot
  • 2 medium Celery stalks
  • 3 clove Garlic cloves
  • 4 cups Vegetable broth
  • 1 tablespoon Tomato paste
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
Instructions
  1. Rinse and drain the kamut, lentils, and chickpeas.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the onion, carrot, celery, and garlic. Sauté until vegetables are softened.
  4. Add the kamut, lentils, chickpeas, vegetable broth, tomato paste, cumin, paprika, salt, and black pepper. Stir well.
  5. Bring the soup to a boil, then reduce heat to low and simmer for 30 minutes.
  6. Remove from heat and let the soup rest for 5 minutes.
  7. Stir in fresh parsley and lemon juice.
  8. Serve hot and enjoy!
